I make this with equal parts of yolks and whites. The extra whites they put in is just to make it absurdly fluffy. Cooks very fast even with low heat and covered. Awesome omelets.

Doesn't it bother anyone when food is cooked only on one side? I can't eat one side cooked food, he could flip it and keep it on for a minute.

I did this recipe, it's pretty fluffy and delicious. The trick is you must put the butter as shown, don't try to oil your pan or something because it won't be fluffy if you do so
