I personally refrigerate/freeze the cake for a little bit after putting the filling in, it helps keep everything in there from squishing out the sides

This is so helpful! My husband loves cream and fruit fillings and we always have a few casualties fall out! Using this from now on!

When I do a filling with a fruit sauce or puree, I prefer to do a thin layer of buttercream first, then the dam, to help seal it in and that the filling doesn't seep into the cake. I love the idea of sealing the dam like you do. Thanks for the tips!

My wedding cake was a three tier vanilla cake with caramel and raspberry filling and vanilla butter cream. We got married outside on the hottest day of the year, and the icing melted, and the cake started to topple and slide. We had to hold it up with a stick. But man was that the best cake I've ever eaten, I wish I could have it again.

If you’re worried about structure, sometimes (especially for this cake) you could cut each layer in half and just put less filling between each layer so it’s an even filling:cake ratio. I do it all the time and I’ve never had structure issues so far. ****only works for thick layers and cakes that are good for stacking****
