Masa is the essence of Mexico! It’s kinda the foundation of Mexican cooking and a lot of families still make their own to supply their daily consumption!

It’s such an amazing feeling to think that I made this tortillas using corn that I started from seed and harvested in my Urban Garden!

This particular variety it’s called Glass Gem Corn and it makes quiet a show in the Garden!

The process of transformation of corn into Masa Harina (corn flour) it’s called nixtamalization and it’s a great method to soften the corn texture, vastly improve its nutritional profile and preserve your homegrown corn for later use!

RECIPE:

- 450 g Dry Corn Kernels
- 1 L of water
- 2 x TBSP food grade calcium Hydroxide
- Metate stone (or blender)
- Tortilla Press (or flat weight)

TIPS:

- if you don’t have a metate stone, you can use a blender.
- If you don’t have a tortilla press just get a flat weight and parchment paper

Brother! As a Mexican I applaud your video! And the fact that you do not use the yellow sweet corn 🌽 makes me so happy! You should try to make carrot tinga! Or vegan "tortitas de espinaca" or vegan "tacos al pastor" with Jack fruit!

I would add a little more water to that masa and cook it on a pan that has been heating longer and on higher heat. Trust me, my mother in law is a master at it and I once had the honor of learning from her and my mother as well, for they are both from MX. Overall, great work. Respect.

Try sealing the tort in the pan 30 sec a side and the 1 min in the microwave. Comes out inflated like a pita and much softer

My brother, the corn you use is so beautiful. So many colors and after grinding it, a fiesta of different textures in one masa (dough). Que Rico! Whip some pork lard with salt and add some beef broth, a tiny bit of baking powder. Add it to the corn grind for a rich tamale masa! Peace and Blessings to you!
