Zero waste potatoes! #shorts

I found this recipe in a book from 1960 from my great grandma and it has been passed on from generation after generation. My grandmother used to make it quite a lot, especially on a Sunday when my whole family was meeting up to enjoy launch.
I obviously added my own twist like saving the potato skin to make crispy potato skin!
The potatoes came from 2 containers, one was a first early variety and the other two second early which could have been left in the ground for longer but I love cooking them at this stage.
RECIPE VEGAN MAYO:
- 1 x Cup olive oil
- 1 x Cup soy milk
- 1 x Tbsp white vinegar
- 1 x Tbsp mustard
- 1 x Tbsp lemon juice
- 1 x Tsp salt
- 1 x Garlic clove
RECIPE POTATO SALAD:
- 6 x medium sized potatoes (or twice the amount in small potatoes)
- Chives
- 1 x Red Onion
- Pickles
- Parsley
- Salt & pepper
- 2-3 x Tbsp vegan mayo
*let cool down the potatoes before mixing
POTATO SKIN:
- olive oil
- Salt & pepper
- Onion and garlic powder
- Paprika
*cook 150C for 20 - 30 minutes
