Hash browns

Ingredients
* 4 russet potatoes
* 8-10 cups fat(duck fat, lard, beef tallow)
* Salt to taste
* 1 tbsp cornstarch
Instructions
1. Peel and grate the russet potatoes using medium side of a box cheese grater. Add the shredded potato to cold water and agitate it to get rid of the starch.
2. Strain the potatoes and squeeze out any excess moisture using a clean kitchen rag.
3. Add the shredded potato to a pot along with the fat.
4. Heat on medium low until it reaches 210 degrees Fahrenheit stirring occasionally so the bottom doesn’t stick.
5. Strain the potatoes and save the fat for frying later on.
6. Season to taste with salt(2-3 tsp) and add cornstarch. Lightly combine together until fully incorporated.
7. On a lined sheet tray, add the potato to a ring mold and form them into an oval shape.
8. Place the hash browns in the freezer for a couple of hours or until completely frozen.
9. Heat the leftover fat to 375 degrees Fahrenheit and deep fry the hash brown for 5 minutes until golden brown and crispy(fry 1-2 at a time).
10. Season with a little more salt and enjoy.

No need to pre cook the potatoes in any kind of fat. Just peel and parboil the potatoes, grate, add your seasoning of choice, shape, freeze and fry till golden in shallow oil. No waste no fuss.

I just peeled, grated the potatoes and soaked them in hot salted water for 5 minutes. Then just strain and squeeze out water, add cornstarch and seasoning. Shape em and shallow or air fry. Took 20 minutes from start to finish

I'm thinking for vegetarians ghee might be an option for the fat, that still brings a nice flavour with it.
For vegans maybe vegetable shortning, although that may lack flavour, perhaps infusing it with mushrooms and/or kelp might help give it a more savoury flavour, or infused with something like herbs and garlic if you want to go for that kind of flavour.

For those wondering why he boils in lard before freezing and frying is becausw thats what mcdonalds does. Or at least did, they tend to change recipes when they get leaked.

Boiling in lard adds flavoring and its also a pretty decent way of preving foods. When you make these in a factory by the tons per day it makes sense that they would make them this way. Plus you dont have to worry about chemical preservatives messing up the taste

Shred potatos, plop them on the stove top with a little oil, let sit until starting to brown, flip, done. salt to taste. let cool to crisp.

I like using potato starch. My husband's late stepfather loved it. He said cornstarch gave a different texture.
Oh yeah, use olive oil and you have latkes. 😊

Which is placki ziemniaczane (potato pancakes), its for a big portion in a big bowl, how many potatoes? Until the consistency is right, thicker but not though to mix, enough to make a blob on the pan that wont flow through the oil
Grate the potatoes, grate one half of a small onion, add one egg, add salt, add flour (as above, until consistency is right), mix
Heat oil on a pan
Put pancakes on the hot oil. Fry until done
No ketchup
Instead make a stew, thick, meaty and brown, consistency of gravy. Its amazing sprinkled with cayenne pepper

In Deutschland heißen die Dinger Reibekuchen.
Kartoffeln schälen, reiben.
Durch ein sauberes Tuch drücken.
Mit einem Ei und etwas Mehl und Salz vermengen, dann in Öl backen.
Dazu essen wir meist Schwarzbrot mit Butter oder pur mit Apfelmus.
Mit Ketchup sind Reibekuchen eine Todsünde, bei aller Freundschaft! 😂
