If they used unity, this is probably the default HDRP atmosphere, set to a smaller size than default so you can see the curvature from the distance you go up in game.

In most games the earth is flat because it is kinda stupid to have the world be round for something almost no one will see. Additionally making it round could have problems with slopes

This game was made in Unreal Engine. All terrain no matter the game engine is always a flat set of tiles that you morph and add other meshes on top off to create your environment. The blue sphere you see when you go far out is not the terrain but the physically accurate atmosphere that adapts depending on where the sun is. So if you wanted to you could scale a sphere to fit the atmosphere and put an earth texture on it. There actually is a tutorial on that by Unreal Sensei.
