New York Steak on the Weber Charcoal Grill

In this BBQ video, I cook a New York Steak on my Weber Kettle charcoal grill. I seasoned the steak with kosher salt and Johnny's Seasoned Pepper. Then I cooked it indirectly on a 275 degree F grill until the internal temperature reached 120 degrees F. That took about 45 minutes. Then I seared the steak for about 1 minute on each side before I removed it from the grill.

I have 3 NY strips to cook for tomorrow night. I have Weber charcoal grill- it’s not a really big and deep one. I’ve always seared and then set it off to indirect heat, but it usually only takes about 15-20 minutes. I’m nervous about this method. Seems a long time to cook a steak.

When ive inserted prob through the top, I've pushed to far and its picking up heat from coals more than internal temp of meat. I always go through the side now.

At first I thought there was no possibility of a medium rare steak with this method. It was actually the perfect steak! What a nice treat from your daughter and son in law. 😊

Very helpful. My fire must have been a bit hotter, because the cooking time was a bit shorter, but the results were great. We followed the general guidelines to a great result!

Only have tried the reverse seared once and it can out tuff, yours definitely came out better

Reverse sear is a great method! I do mine oven into cast iron. Finish with butter, rosemary, thyme and a crushed clove of garlic. Baste. What a delicious sear! I bet the charcoal makes it taste great!

Good to see some more grill videos. I think a good medium rare steak reverse seared on the charcoal grill is still the best thing I make and super simple
