Steak School: New York Strip (Strip Steak) 🥩

The NY Strip is an unappreciated cut. People love the ribeye for its flavor and the filet mignon for its tenderness, leaving the strip as an afterthought when it comes to prime cuts. The reality is that strip steaks are extremely balanced - IMO the perfect combination of the two. Most importantly is value.

I often see New York strips 30%-50% cheaper than Filet or Ribeye counterparts. This allows the flexibility to move up a level in quality (ie Prime vs Choice or Wagyu vs Prime) without overspending. I would choose a Prime Strip (high marbling) over a Choice Ribeye (average marbling) any day of the week.

NY Strip is my favourite cut. I like my steak medium rare or rare. With ribeye, if you go too rare the fat doesn’t have time to render down and you end up with some stringy fat throughout that’s even hard to cut sometimes. NY strip you can cook more rare cause it’s a bit more lean. But still thick and juicy, more than say a sirloin. Filet mignot obviously really good but it’s so thick it’s hard to get the right cook on it, and doesn’t get as nice of a char.

Just want to said that i really appreciate your vid. I just started my 1st semester culinary college 2 weeks ago. And this kind of vid really help me a lot.

Day after tomorrow, we will have test of fundamental of foods at chapter 7 which about understanding meat and poultry. So, really appreciate this one and the timing.

I work Produce in a retail store and am next to the meat department. I try and learn what I can but I don't know much of anything right now.

The New York Strip is my favorite steak cut. Although I think I would have preferred if the fat cap was rendered a bit more.
