"Vegetables require ample space! The greater the space they have on your baking sheet, without overcrowding, the superior their roasting outcome. When veggies overlap, they tend to steam instead of achieving that desired roasted texture, resulting in somewhat limp and soggy flavours.

Preheat your oven to a scorching 400°F - 200°C to ensure that the vegetables become tender on the inside and acquire that delightful caramelised exterior. Then lower to 350°F - 180°C once you put in your veggies.

Apply just enough olive oil to thinly coat the vegetables evenly. Too little can lead to burning and drying out, while excessive oil makes them overly oily and soggy.

Be patient and allow them to bake sufficiently to achieve those golden brown edges; this is where the true flavour magic happens!

I'm vegan and regularly eat a pile of roasted veg made just like this, sometimes adding chickpeas, on a bed of wild rice, other times on a pile of lentil pasta dressed with a bit of salt and olive oil. So satisfying and delicious!

I used zucchini, sweet potato, onion, garlic cloves, baby king oyster mushroom, broccoli and red bell pepper.
For the dressing I use EVOO, Baslamic Vinegar, Salt, Black Pepper, Dill & Parsley & Garlic Powder.

When cooked 15minutes I saw the broccoli getting charred and I was worried but I continue to let it sit for a total of 30min at 180degC. Because I was also worried that the sweet potato will not cook through if I stopped midway. But I stayed patient and let it cook.

The end result is really wonderful. Juicy vege and pack a ton of flavor.

I put my mixed veggies right under the rack of a roast or chicken. When the meat juices drip down and the veggies get soaked with the juice…. It’s incredibly delicious!
