Roasted vegetables are such an easy side to pull together any night of the week. Chop up your favorite veggies, drizzle with some oil, season them up and bake!

📝 INGREDIENTS:
Yield: 4 servings
2 zucchinis, sliced
2 yellow summer squash, sliced
1 medium red onion, cut into 1-inch pieces
1 cup cherry tomatoes, halved
1 red or yellow bell pepper, cut into 1-inch pieces
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cloves garlic, minced

Preheat oven to 400F. Baked the veggies for 25 to 30 minutes until squash is tender and onions are cooked down.

Literally no color on that. What was the point or roasting is the veg isn't ROASTED??
