Tender Beef Pot Roast & Gravy

Roasts are so small these days. When I was raising children…we’d have roast and then get two or three meals as left overs. Things like shepherd’s pie, corn beef hash etc. It is so unfair to young people these days. Prices are so high and the cuts of meat are tiny. Come on government….something needs to be done for these young families. All these young people have it so hard with the cost of living and they deserve the same opportunities as we had. Off my soapbox.

This sounds fantastic. My dad did all of the cooking when I was growing up. His favorite Sunday meal was a rump roast prepared with plenty of garlic, onion, carrots and potatoes. Also, Bay Leaves. The house always smelled so good plus there was always plenty to share.

Love it all. And as much as I love a one dish meal, even more I prefer if the veggies are done separately when time allows. Mashed or roasted potatoes are my faves!

My mother made that exact same pot roast in the 1960’s we loved it and leftovers were great.

Omg that looks so good. I remember when I was younger my mom used to make pot roast for dinner all the time. She’d throw it in the crock pot before work with all the veggies. My dad worked local so he’d stop by for lunch to check on it. By the time everyone was home from school and work it’d be ready and it was always SO friggin delicious! Miss those days. I’m gonna try this recipe tho for me and my guy!
