Use a pressure cooker people! 30 mins for fresh and 45-50 (but do check the temp to see that it’s fully cooked) mins for frozen like a brick. Then finnish off in a hot pre heated oven for 15-20 mins for the crispiest skin you’ll ever get, and oh man is it tender and juicy. No overnight in the fridge, no marinade, no smoking, blah blah blah. Pressure cooker then HOT heat, that’s it😮
