If Matilda is not considered a "queen" because she didn't have a coronation, why is Edward VIII considered a king when he abdicted prior to his coronation? Maybe I missed something here.

The custom is to take the father's name for the house name so of course Elizabeth II is of the house of Windsor. Charles is free to change it like Queen Victoria's son did. Elizabeth's decision only counts for her lifetime.
