How to Make Fermented Carrots and Ginger

Today I show you how to preserve carrots with lacto-fermentation in this recipe of fermented carrots and ginger. I'll also discuss a few ways to use it as an ingredient in your meals to add an extra burst of goodness with the beneficial bacteria.

Recipe
4 cups shredded carrots
1 tbl shredded ginger
1 tbl sea salt
1/4 cup brine from fermented veg
OR instead of brine add an additional 1 tbl salt
Mix up all ingredients and mash up for around 10 minutes to generate a brine solution. Pack firmly into a jar and leave at room temperature for a few days. After it has fermented for this time, try some and if you are happy with the taste, move it to a cooler location such as the refrigerator.
