As someone who grew up eating curry in a South Asian family, I love the Japanese take on it. Their definition of spicy is lower than mine, but I was honestly impressed with how good it tastes.

Omg, you mentioned Vermont! Their curry have sweetness to it due to the apples, love it. Try Java one next, it has a hint of coconut flavor and the extra hot one is really bomb.

I'm in a pretty remote area, so I had to make my own curry roux. I began by toasting the whole spices, then tossed them into a molcajete to grind into a powder. I made a butter and flour roux, added the spices, and let them set in a pan, - until it looked like a chocolate bar. It was absolutely delicious and worth the work!

I use these too but I add a little heavy cream, coconut milk, extra curry leaves, optional brown sugar but prefer honey, asian pears & apple puree.

For veggies I use carrots, onions, potatoes, and anything you like.

I use thin sliced meat like pork or beef. Pork Belly works too!

When I'm doing chicken, I use garlic/onion powder/salt/black pepper in my crispy batter mix, deep fry and let it cool then double fry it for extra crisp. Then the crispy chicken is poured on with the curry.


Serve with rice.

Japanese curry is one of my go-to meals . I just throw in whatever vegetables are about to go bad (I don’t eat meat much) and make it while my rice cooker does its thing. It’s a comfort meal to me now, honestly.

I've made this for my family twice now and going to make it again on Christmas Eve. We love it, it's so good.

i made curry a while back and SEVERELY underestimated how much leftovers there would be! i ended up giving away some of it and it was still able to last me a week and a half. planning to remake the recipe, maybe i'll get the proportions right this time ^^

I just made a batch of my japanese curry the other day just how my grandma used to make it. Leftovers of curry are actually my favorite...the spices get stronger to me and it gets a bit thicker which I like. The best food to make a ton of and then eat over the next week. 😍

Truth! I made curry two days ago and had the leftovers for dinner. It definitely got better and was totally delicious. Also the price even in the USA (if you are close to an Asian supermarket) is hard to beat.

Golden curry blocks are my fave to use, I throw in chunks of beef, potatoe, carrot, onion, and I’ve im feeling up to it cos peas as well good for bulk cooking
