Thanks for stopping by! If you find store-bought mayo to be a bore, and you've always wondered how that crazy stuff was made, this video is for you!

Ingredients:
1 egg
2 heaping T Dijon mustard
1 T white vinegar
2 T lemon juice
1 T black pepper
1/2 t garlic powder
1/2 t salt
3 cups canola oil

I substituted 1 cup of the oil with avocado oil. I don't personally like olive oil, but if you like that bold flavor, you can substitute 1/2 cup of the oil with olive oil. Don't go too crazy with olive oil, because the flavor can overwhelm the mayo.

It turned out amazing! I did break my mixture so I had to get another jar and a tablespoon of water. I slowly added my broken mixture to my new mixture and it worked perfect. I did forget to put lemon in but it still tastes AMAZING. I had champagne vinegar on hand and I’m loving the flavor in this. I used grape seed oil and avocado oil. Thank you!!

My original "go to" mayo was Joy of Cooking....the texture was "looser" and had to make some alterations if I used it in a salad or dressing. The texture and taste of this is absolutely magnifico. I can't recall the costs of my oils but this has to be far less expensive to make and produces a vastly superior end result. I just put the finishing touches on homemade catsup--anxious to see how the combined flavors work--just in time for cookouts and shamburgers (vegetarian hamburgers). SECOND BATCH AND ONE HOUSEGUEST LATER: My friend was absolutely blown away by both flavor and ease of making (and the catsup as well). I have used it in Ranch, Green Goddess, 999 Island (make your own relish), lime-ginger-chutney-curry dressing for a chicken salad, and a cottage cheese-pecan-black olive pate for tea sandwiches. Far better results than I could ever have imagined.

Many years of experience have taught me that sunflower oil is far preferable if you want the real taste of real French mayonnaise. So I never use egg whites, only the egg yolks which also help to give the beautifull yellow color. My recipe comes from an old French cookbook..

May I substitute yellow mustard or does dijon mustard have certain attributes that are integral to the emulsification process, etc.

made just now, and it is just perfect. tried just with three yokes without the whiter as it was advised on Gordon Ramsin's website and it's not working, but whall egg is turned in real mayo! besides i made it with English mustard and its very delicious.
