The jedi also used electrum plating on their lightsabers as a symbol of great achievement, like mace windu's saber. Palptaone making multiple electrum sabers just because he wanted to os another reason it's so disrespectful towards the jedi order

Short Answer: He covered his hilt with aurodium. Aurodium and electrum was traditionally used by Jedi to decorate their saber while also stating they were amoung the best duelists. Palpatine completely covered his hilt, thereby stating he was better than all of them.
