to get hard shell candy, you can check its readiness by preparing a bowl of cold water and drop a bit of your molten sugar there! if it turned out hard like candy then it's ready, but if it's still chewy and pliable when you took it out of water then you need to wait for some more time! ☝🏼

You have to wait for the colour to turn amber for the best crunch and then as soon as the colour turns amber, turn the stove very low to keep the caramel liquidy and not harden. Because the caramel will be burnt and turn bitter if it keeps caramelizing on the medium flame heat.

300 degrees F and immediately take off the heat, and when you put the sugar and water on the stove don’t mix it at all. 2 cups of sugar and 1 cup of water is all you need to make this :)

Almost any fruit would work. Try pineapple chunks, and kiwi. Maybe some peaches and some mandarin orange segments.

I often see *orange* tanghulu or perhaps *blueberries.* Some people have done it with *marshallows, * and dipping it into the hot sugar slightly melts them inside and tastes like toasted mashrmallows. I'm also curious about *cherry tomato* tanghulu. Apparently, it's really good.
