So... my second Tanghulu attempt turned into a drippy watermelon fiasco!

✨recipe:
✨skewer fruit on a stick (watermelon, strawberries, grapes, etc.)
✨in a small saucepan, heat up 2 cups of sugar and 1 cup water over high heat. Boil and with a thermometer make sure the mixture gets to 300F (no less). DO NOT STIR. Once it gets to 300F, remove from heat immediately, and start rotating the skewers into the sugar mixture.
✨Best practice is to immediately remove the fruit out of the sugar mixture and plunge into ice cold water. Serve immediately and enjoy 😉

As a Chinese, i can tell you to freeze the fruit in a freezer 10-15 mins before hand instead of dipping it in cold water afterwards. Somehow it should crystallize better!

I have a recipe for pineapple bars
1 pineapple
Dark Chocolate
Flaky Salt
Instructions
Cut pineapple into medium sized squares
Melt chocolate and cover pineapple
Put Salt on directly after chocolate
Freeze for 1-2 hours
They turn out soooo good

For what I can remember it needs to be in a specific crystalization state where the sugar barely starts to become solid when cooled down but still clear in terms of color, not brown

I recommend freezing the watermelon for an hour or two before you dip it into the tangulu liquid it will make it drip less while still tasting the same
