Hi Sid :-) after you put the airlock on top of your jug full of vegetables that you're going to ferment, a suggestion would be to put a piece of cheesecloth over the very top of that airlock because the holes in that airlock are not small enough to prevent any fruit flies or gnats from getting into the vegetables that are fermenting, guess those little critters love something that is fermenting, that was a problem that I had while fermenting my own homemade wine :-) yes all it takes is one fruit fly or one nat to get inside there and the whole thing is ruined

Syd, you've got to find a recipe for real German Sauerkraut. It's not salty like kimchi is nor does it stink the house up.

When I worked in Germany we'd go out to dinner a couple of times a week. I was told to try the sauerkraut. The only sauerkraut I liked my great grandmother made and nothing else came close. Boy was I wrong.

The Germans used red cabbage, a little salt and some type of sweetener, could be honey or brown sugar. German pork shoulder, potato's and sauerkraut, oh my.
