I brined this pork belly for 7 days with the intention of making bacon, but plans changed. After soaking it for a half hour to remove as much sugar as possible, I deep fried until an internal temp of 185F. Similar to chicharron, it ended up tasting incredible!

In Spain we do this; it’s called Torreznos and it’s one of the best things you can put in your mouth if done properly.

It’s usually “confit-ed” first (low and slow deep fry) and then deep fried fast.
