These are so simple to make, and so good you'd think it was a holiday! I hope you give them a try!

Balsamic Honey Glazed Carrots

1 lb bag fresh carrots
2 tbs honey
2 tbs vinegar
1 tbs olive oil
salt and pepper to taste
1/2 teaspoon thyme
1/2 teaspoon fresh garlic chopped

mix all (except for carrots) ingredients together in a small mixing bowl. Cover carrots with HALF of the mixture and roast in a preheated 375 degree oven for 20 mins.

Flip carrots and pour remaining mixture over carrots, coating them nicely. Roast for another 25 mins, or until carrots are cooked through and tender.

If you are not using raw honey you are not usng honey. Pasturized honey is nothing more than liquid sugar. Trust me I'm a beekeeper.

Trader Joe's Makes a great balsamic vinegar. Not that expensive either. But if you hate it you can bring it. Back...

Absolutely beautiful. I have seen some people boil the carrots first then glaze after. And put in the oven. Is there much difference between the two.
