this looked so good--I had to make it, but I didn't have any cucumbers. I subbed zucchini instead and add mozzarella cheese chucks, both diced up really really small. My zucchini hating husband went back for seconds! Thank you!

This salad was very good! My hubby loved it. I did have to add more olive oil but I’m sure it’s because of our huge tomatoes and cucumbers. Taste like summer and paired well with our salmon. Thank You!
