Korean Corn Cheese - this is the ultimate creamy, cheesy side dish 😋

Corn cheese is a popular dish in Korea, usually eaten at Korean BBQ and paired with soju or beer. It’s very rich and pairs so well with grilled meats.

Korean food typically adds sugar to most dishes and this is no exception! Don’t worry though, it’s not overly sweet. I think it balances perfectly with the savory cheese.

— I used Japanese mayo for this recipe but you can use American if that’s all you have. You can add a bit of extra sugar and rice vinegar to make up for it.

2 cans (15oz each) sweet corn, drained
50g onion, finely diced
2 tbsp unsalted butter
1 tbsp brown sugar
100g shredded mozzarella cheese
1/4c (55g) Japanese mayo
Pinch of salt

Heat the corn and onions on medium heat until the water evaporates. Reduce the heat and melt the butter and brown sugar. Then add the mayo and a pinch of salt and mix well.

Flatten the corn and top with cheese, then cover til the cheese has melted.

Garnish with parsley or scallions & enjoy!!

Also please don’t eat the entire dish by itself 😅 This dish is very heavy and meant to be shared and enjoyed as a side!

Just out of curiosity does anyone know if it works with frozen corn or does it have to be canned
