Looking for some great, tasty summer side dishes? I'm sharing 5 of our favorites!

3:36 Baked Zucchini and Tomato Mozzarella
Baked Zucchini and Tomato Mozzarella (side dish) Submitted by Nancy
2 cloves Garlic
½ medium Onion (I like red onions)
3-4 Small zucchini
15 Cherry or Grape tomatoes (Cut in ¼ or 1 Large tomato)
1 cup shredded Mozzarella Cheese
1 tbsp. Olive oil
Salt and Pepper to taste (optional)
Directions:
1. Preheat oven to 350 F
2. Dice garlic, onion, zucchini and tomato
3. Grease a nonstick skillet with olive oil place over medium heat.
4. Sauté zucchini, tomatoes garlic and onions until veggies are tender.
5. Reduce heat to low and simmer for 5 minutes.
6. Transfer Veggie to baking dish. (I use a 9x13 so every bite has cheese)
7. Top with cheese
Bake for 10-15 minutes until cheese is melted and slightly brown.
