My family has always fried the eggplant like this, with flour, no bread crumbs. I’ve never seen anyone else do it this way though. I almost jumped out of my chair when I saw you go from the flour to the oil! I said to myself, “is he gonna use just flour? YEAH HE IS, I love this guy!” 😂 This is my all time favorite dish since I was a kid. Thank you!

Eggplant Parmigiana has been my favorite dish since I was a small boy. I do prefer it with the skin on, but I liked my slices a bit thinner. Great dish! TFS!!!

We grew some great eggplant and they are still producing.. I've dehydrated a lot of them and fried quite a bit. I'm going to do this recipe next weekend!

I do it a bit different, after flour i dip in egg, then fry, but the rest is basically the same, also one of my favourite food . Good evening from South Australia.

I dont know why people are complaining about the wife. I think she is adorable trying to help and sharing your passion for food. I literally laughed out loud when she explained to you what "cutting the cheese" means in America. 🔪 🧀 🤣 My wife is the same way. God bless you both, stay healthy, and keep the great vids coming! Oh, and I'm going to give your eggplant recipe a try. I LOVE eggplant parm but only make it once a year for Christmas because my recipe and prep is a bit different than yours and takes a lot longer. I'm curious to try yours. I'll let you know how it comes out!
