I've never "really" cooked before in my life. I would toss some stuff on the BBQ but really had no clue what I was doing. I decided to get some filet mignon and randomly thought to go on youtube to see how you're actually supposed to cook it. After following these steps, I was AMAZED that I cooked something that tasted so good. I'm hooked on cooking now haha! Thank you!

Always a very hot oven...400 - 450. Time depends on how well done you like it. Mine is generally 3 - 4 minutes for med-rare.

Great video. I didn't catch the oven temperature in the video but I may have missed it. What type of pan is that? Is the room temperature suggestion really important? And is the amount of time of salt on the steak important to the searing as well? What if you salt longer than 20 minutes before or shorter etc...

Hey Robert - So on the smoke...some in normal, and frankly I don't worry about it. But if the smoke alarm's are going off...just don't let the pan get quite as hot before you start cooking. On the well-done temperature...keep the high heat, just cook for less time. If you tried 5 minutes in the oven, try cutting that to 2 minutes. Less time = More rare.

Hi Dave - great video, thanks for sharing. I cooked a filet tonight, and I'm wondering if I used too much oil - my kitchen, better yet...my whole house was completely smokey after searing for about 2 min on each side and then cooking in the oven. What do you suppose I'm doing wrong? I set the burner on high, got the oil really hot, seared for 2 min on each side and then baked in the oven for 5 min...then the steaks came out well done...at $17/lb, I don't want to keep making the same mistakes...

Great video, Dave! So only 6 minutes total for a 3 inch steak? (2 min. on each side and in oven @400 for 2min) Would I have to change the cooking time if I had 4 pieces of filet in the pan?

I made this yesterday and it turned out PERFECT!! I don't like rosemary too much so left out that part.

Hi Dave, Nice trick with the thumb-forefinger/littlefinger trick. Someone else asked and I didn't see your answer, but what temp is the oven for that 2 minutes for cooking. Thanks, Paulie
