In those mountains you can mine more than iron and coal, the another ore in them is very important for villager trading (emeralds).

if you're in need of iron and aren't ready to go caving, i've got the solution for you!
I don't know the exact name of the biome, but it's them mountains that have calcite streaks in them. those have insane amounts of iron AND coal. they aren't too high either, so it's quite easy ti get up and down them.

I like to gather iron and coal at those flat stone surfaces, I don't know what the biome is called, but it's mostly flat and has just stone and ores
