Account for carry over baking by taking the pie out of the oven when the center wobbles just slightly. Once the pie completely cools, the filling will be silky smooth and perfectly set.

Larger pumpkin pies may also crack when over baked

today (thanksgiving 2023) i used this video to decide when we should take out our pies. i'm so glad i did, because they came out perfectly! usually we overbake them, so having a genuinely smooth pie is really new and cool. thanks a bunch !!!

Forgot this rule of thumb and I have a pumpkin pie in the oven. Didnt want to over bake or under bake it this time. Thank you! Glad I'm practicing before the holidays.

The recipe told me the jiggly part and that a knife should come out clean and I was questioning each time if it was clean or not. So i kept putting it back in. Glad i saw this in time before i super over baked it.

The "overcooked" pie tastes better. You get a little caramelization going on there and that tastes good. I don't care if the filling isn't silky. I want it to taste good more than I care about pie filling texture.

Thank you!! I wont go NEAR libby mix because it tastes mildewy to me! Its sooo easy to bake sugar pumpkins sliced in half, stabbed from the back w a big kitchen knife, & put on a greased cookie sheet with soybean oil, 400f face down for 30 min. Peel the skin and blend into a puree! No ingredients.
