My mom used to cook down pumpkin to make the puree and then bag it up in freezer bags for later use. Her pumpkin pie is the best. She'd clean up the seeds, soak them in salt water then roasted them so we'd have fresh pumpkin seeds to eat.

I have never seen anyone bake the pumpkin in sheet pans with water. That's truly an excellent way to prepare them. So simple, quick, and so easy to clean up.

I first time tested pumpkin pie here in USA. I actually like it a lot, and it became a tradition to me to buy it and walnut pie in Christmas.
