Lemon Capellini

Ingredients

Good olive oil
Kosher salt and freshly ground black pepper
1 pound dried capellini
1/2 pound unsalted butter (2 sticks)
Zest and juice of 2 lemons, plus zest of 1 lemon for garnish

Directions

Drizzle some olive oil in a large pot of boiling salted water, add the capellini, and cook al dente.

Meanwhile, melt the butter in a large saute pan. Add the zest and juice of 2 lemons, 1 teaspoon salt, and 1 teaspoon pepper and bring to a simmer. When the pasta is cooked, use tongs to remove it from the pot and place it in the saute pan. Toss the capellini with the butter mixture. If the capellini is dry, add extra pasta water.

Place one serving of pasta on each of 6 plates. Garnish with grated zest of 1 lemon and serve immediately.

I made this for dinner last night. I doubled the recipe since I have a big family. I thought I made way too much however my family devoured it all with nothing left over.

I love how basic it is. So you can eat it just like this. Or you can add whatever you feel like. I was thinking roasted asparagus and tomatoes. Looks very yummy

This is delicious as made. It’s also amazing with roasted cherry tomatoes and garlic. You can cut the butter in half and add some olive oil instead if you want. I’ve done that too and still very good. Excellent recipe and very versatile.

I made this for my parents this evening. I used garlic pepper rather than salt. Delicious. I also used veggie butter and it was still amazing.

I added minced garlic and a pinch of red pepper flakes while the sauce was cooking and then added grilled chicken. I finished it with fresh parsley and grated parmesan cheese. My family loved it!
