8 minutes is perfect for ramen. 12 minutes is perfect for hard boiled eggs. I normally dont go below 8 minutes cuz it makes me sick...

Taking the eggs from the fridge is critical to getting a firm white with a soft yolk. If you use room temperature eggs you either get snotty whites or a full hard boiled egg. You need that temperature gradient.

Also use as big a pot of water as practicable. If you use a small pot of water and dump a bunch of eggs in they will significantly cool down the water while themselves warming up, thus losing the effect of the temperature gradient.

Of all foods, eggs require the most understanding of physical chemistry to master.

I love Malaysian soft boiled eggs. Pre boil water, add to sauce pan, bring to boil. Turn off heat and slowly add eggs. Cover with lid and set your timer for 6-7mins. Rinse under cold water. You should be able to crack them open into your bowl and they should fall out as if poached. Add butter and salt for an eggy soup or load up the butter up on fresh toast bread and dip away. Best eggs ever!!!

You can pop them in the fridge for a few days soaked in soy sauce and it’ll be seasoned and the yolk will be more jammy than runny :))

I personally am on team runny yolks, but here are my views on both runny, and hard eggs:

Hard eggs: convenient, easy, portable, kinda dry and tasteless in my opinion, but alright.

Runny eggs: soft, runny yolks, meaning u can dip things in it or let it run into your ramen broth, easy, and quick.

The way I do it, 5 minutes the white doesn't cook all the way, 6 min is perfect runny boiled egg and 7 minutes is no longer runny. 🤷‍♂️

I cook mime for 8 minutes on medium heat and it's perfectly between hard boiled and soft boiled. Solid but soft if that makes sense lol

I finally found the answer to how to get an easy peel egg. All you do is let the water come to a boil and then you put the egg in the water. It does something to the shell that makes it separate from the egg. I tried it, it works every time. I use to put the water and eggs on the stove to heat up at the same time. The shells always stuck to the egg.
