I just went down a rabbit hole of looking at Majime knives. Unreal craftsmanship. I've got a $80 kiritsuke and it cuts like butter and holds a great egde, but I think one day I'll scoop one of Majime's knives up if he's still making them in a few years. I feel like I wouldn't buy another knife after obtaining one of those.

Santoku and a Chef.
I've sharpened the Santoku over 100 times and never cut myself with it.
