I am a single home cook (cooking for one) so I have very light knife use. I bought Victorinox knives (8”, 5” and paring) and love them. They are on the low end of hardness scale for good steel, true, so their edges may bend but are less likely to chip. I also bought a Victorinox honing steel and use it to straighten the edges after using and washing the knives and my knives have stayed very satisfyingly sharp for my uses.

I've sharpened a lot of knives for family and friends, so I get to feel a variety of knives. To be honest, there is just something special about Shun. I have some high end carbon steel lasers that are amazing, but for some reason my everyday go to are Shun.

tojiro is always the best choice for low budget chef knife. you can get a razor sharp VG10 in $80, hardness 60

Please, Shun (say "shoon") is Japanese-made, but most definitely western- or almost German style due to its blade's pronounced belly. It differs from a classic western knife by the thinner blade made from harder steel and the lack of a bolster. All that makes it what's called a fusion knife. Shun Classics look and work great, but are a little pricey for what they actually deliver.

Also, no mention as to how well any of the knives hold an edge. It appears they cut each meat/herb/veggie only once with each knife. ATK puts knives through a drawn-out torture test, to test how long a knife stays sharp after heavy usage.

Years ago, a chef gave me a Forschner chef knife. I’ve never looked back. I call him Excalibur.

Where is the Misen knife made? I see a lot of Chinese knives speak of German or Japanese qualities, but never mention where they are made.

If you're going to mention both Japanese- and Western-style knives, and then not include a single Japanese-style knife, perhaps you'd like to explain your reasoning for doing so, and maybe a bit about the difference, s so that viewers can make up their own minds on which they might prefer?

It would also be helpful to put actual numbers to the "lower/higher price points" of the Victorinox and Shun blades, since you DID give us a price for the other two.

Here is a thought for those out there that WANT TO LEARN TO COOK, NOT HAVE TO, BUT WANT TO. Then look back over the past several years and add up all of the $200 plus purchases you have made that you no longer use, or things that were a one time event, such as concert tickets or going to a professional sporting event or a night out on the town eating and drinking. And then ask yourself, if I were willing to spend a couple hundred dollars on those frivolous purchases, why should I buy a cheap knife when a knife is the most important and most used piece of equipment a chef uses on a day in day basis. If you take proper care of it a good knife will last your entire life.

Sorry dear but stainless steel knife blades are super hard to keep sharp and sharpen.

These are the best knives they have on hand. Just like all their other best of lists. No mention of Heckels, Wustoff, Miyabi, Global. Shun are horrifically overpriced for mediocre knives.
