really helpful, today I cooked a New York strip steak but it looks pretty much similar to rib-eye, Now I know that a T-bone could fall into New York strip and tenderloin!

I have been eating rib-eyes, but recently converted to ny strip - to me ny strip is just pure definition of steak in terms of flavor. Very beefy and tender. Again, more marble/fat is not always better in terms of flavor; all depends on personal taste.

Why would anyone trim the fat before cooking? You should be rendering the meat in the cooked fat. Always cook with the fat on. Remove the fat afterwards if you don't intend on eating it.

About to cook a NY Strip steak and needed a answer since I couldn't help but notice the overall similarities between them and a ribeye.

I'll probably alternate between the two cuts based on whatever's cheaper at the local butcher that month; since they're so similar in terms of size, quality and taste, I won't be losing much (if anything at all) since I use either standard sear or reverse searing methods.

I just BBQ a New York sirloin steak, it was 1" thick and it was cheap over Memorial Day. It was 12$ vs the 30$ Rib eye. I prefer the Rib eye cause it's a little more tender but I'll take the sirloin from now on. It taste the same, it's a little less tender if you don't cook it right.

The Ribeye is also called a Spencer in many locations.

Yeah I've never bought a prime NY strip with that kind of marbling.... Prime strip > Prime Rib-eye I dunno where you bought that prime strip but the one in this video almost looks like select.

Marbled is always better, though in these fat-phobic times, many people would just say "fatty." This is a mistake. A marbled steak of a given cut will be much juicier, more tender, and more flavorful than a lean steak of the same cut.

I remember showing up late to a sale my local store was having on steak. There were only two packages left, and I sighed in relief when the couple in front of me chose the lean steak over the nicely marbled "fatty" one. I ate much better than they did that night

I'm so confused. I know this is an older video but... Trimming the fat cap off of a NY Strip? What? Rendering the fat over a hot cast iron and letting it develop a perfect golden brown crust before searing the steak adds so much flavor. ANd i see people saying it's not edible? Why isn't it? I find it to be very tender..

New York’s are WAY better! Much better texture.
Ribeye’s tend to be too fatty and mealy in texture.

Maybe you can help me decide if rib eye would be a good choice to try. Typically I get ny strips well done. I like my steaks crispy but juicy and enjoy the side of ny strips the best so would I like rib eyes?
