I also dehydrate the scraps after ive made broth and add it to my dogs food.. just a little at a time... they think they are royalty

Don't get rid of the fat! Strain it, save it, and use it for cooking. It imparts a beefy flavor to stir-fries and the like, has a very high smoke point, and is much better for you than things like soy or vegetable oils with their trans-fats.
