This video provides a useful high level overview. I think that apart from understanding the entire business and it's functional process flows very well, every project implementation team needs a cross functional consultant who has many years experience in implementing a variety of different organisations. This person should also preferably be qualified in the financial and operational side of business. The reason is that many times in practice, due understanding is not applied to the business problem at hand but rather the most "obvious" way to parameterize or set up individual modules to suit the operation of the particular ERP system. This often does not align with downstream business processes.
