I’ve been experimenting with adding fermented veggies to my salads and this one is so good, I have to share it. Mixed greens topped with the nutrient-dense whole grain kamut, some cucumber, tomatoes, and these delicious fermented carrots, because did you know that you can ferment more than just cabbage? I’ve added chicken for protein, but you can totally swap in some beans to make it vegan, then dressed with a balsamic vinaigrette. A recent study showed that eating fermented food increases gut microbiome diversity and lowers inflammation. I tried it too - check out my full video for the deep dive.
