Chia seeds are an excellent source of fiber, which can improve heart health, reduce cholesterol levels and promote intestinal health. Fiber takes longer to digest and makes you feel satisfied longer, which is how it can help with weight loss and decrease your risk of developing diabetes or heart disease.

Raspberry chia seed pudding + walnut sweet cream
4 minute easy prep • 4 hours full 🥰
(only 5 ingredients)

SAVE this recipe for your next meal prep
*and if you don’t meal prep, this might be a great place to start*

Ingredients:
3 cups of milk (I used almond milk)
1 container of raspberries
8tbsp chia seeds
Walnuts (one small handful)
4 pitted dates

Raspberry chia pudding:
Combine 2 cups of milk of your choice (I used almond), with a full container of raspberries - save a few for toppings

Put the mixture into a container, then add 8tbsp of chia seeds.

Mix then put in the fridge either for a few hours or overnight (for the chia seeds to expand)

Walnut sweet cream:
Combine a small handful of walnuts and 4 dates, and 1 cup of almond milk then blend till smooth - add milk as needed

When the chia speeds have expanded, portion the pudding into glass jars (I’ve linked mine on my LTK) then top with your walnut sweet cream and a few raspberries!

Refrigerate until you’re ready to eat them!

(If you’re feeling like treating yourself, add a peice of dark chocolate or peanut butter when you finally indulge in them mmmmmm 😍)

Fun fact: if you want the fiber from the chia seeds but not too fond of the texture, you can blend it with the almond milk and raspberries to make a smoother consistency. Thanks Jo! Keep the recipes comin!✌🏼❤️

I tried this recipe today and the Greek salad. I had the salad for dinner. Very delicious! In the morning will be the raspberry chia pudding.

I like those glass containers I just got rid of my plastic containers as the plastic can leach into the food! Yours are very pretty with the coloured lids too! Nice 😊

Very yummy, but it wouldn't keep me full for 4 hours. Maybe for two, but if anything I would definitely eat this because it wouldn't cause a glucose spike and has a lot of wonderful health benefits. Love the walnut cream idea!

This was a hit!! Made it as a natural sugar dessert option & it was all gone 😋 FYI for anyone else who might need the tip, I use dairy milk and had to use at least 2x as many walnuts & dates than called for to get the same cream texture. Still worth it!
