Homemade Honey Bread and Cinnamon Bread

Ingredients for bread dough:
2 1/2 tsp yeast
2 1/4 warm water
1/4 cup honey (you can use sugar)
1 tbsp butter
2 tbsp oil
1 tbsp salt
5 1/2- 6 cups of flour (more or less depending on where you live)

Instructions:
Combine warm water, yeast and honey in a mixing bowl. Stir all the ingredients together and let it sit for about 5 minutes or until the yeast has proof or looks foamy. After 5 minutes add the butter, oil, salt, and about 2 cups of flour. Turn on your mixer or hand mix, you want to gradually add in more flour. You want the dough to not stick to the bowl. If it sticks add more flour. I added about 6 cups total. It might vary for others. Once the dough is done mixing put on a floured surface and knead for a few minutes. Place in an oiled bowl and cover. You want to let the dough rest for about 1 hour or until doubled. Once doubled I took the dough out divided into two loaves and started preparing my bread. I took the dough and spread out in a rectangular shape and flatten with my hand. I then started rolling one end to the other to create a log shape. Then seal the edges, like the bottom and the sides by pinching the dough together. Place in a loaf pan and prepare your second loaf.

Cinnamon Filling
1/4 cup brown sugar
1 tsp cinnamon

For the second loaf I again rolled out the dough into a rectangular shape and then I sprinkled the cinnamon mixture on and used the back of a spoon to help spread. With this mixture you want to leave a border around the sides so it doesn’t come out when baking. Again roll from one end to the other and seal very well by pinching the dough together so the fillings don’t come out when baking. Cover both breads with a wet paper towel and let sit for another hour. Bake at 350F for 30 minutes or until golden brown at the top. I removed from the oven and brush with some melted butter which is totally optional. I let my bread cool completely before cutting and storing.

I love making the honey bread for sandwiches, toasting the bread and putting peanut butter and more honey, spreading avocado and topping with salt, pepper, and red pepper flakes… Mmmm!! For the cinnamon bread I also like to eat toasted with a little butter. So delicious!! The honey flavor is very mild and doesn’t overpower the bread making it very versatile for any recipe.
