I mean the best men-at-arms are siege units in my opinion. Obviously on the field they're not great, but sieges are generally more important anyway.

Thunder across the steppe with Horse Archers!
Until High Medieval comes around and people get Crossbows, they're only countered by the Han and Armenian MAAs (and on the steppe, even fully countered, they still do 9 damage and have 20 Toughness, which puts them on similar footing to a Light Footman without terrain bonuses).
Basically the only thing you can actually do against them without those is to force them to fight in a mountain or a marsh (which brings them down to "only" 15D/20T).

Crossbowmen are also really good since they counter horse archers, heavy infantry and armored horsemen at the same time while having good stats overall

I'm new to ck3, and onagers have been a godsend. Sieges just take _forever, _ and my King has most of his skills dumped into being a brilliant tactician so he's already strong enough to defeat most armies with levies alone, and maybe a few cavalry too. Reducing siege time is a nice way to ensure his conquest won't be cut short by old age, since he's already getting up there in years and Europe hasn't been fully conquered yet

Georgian Horsemen are basically great on any terrain which is pretty cool

The English longbowmen were some of the most dangerous people on the battle field during that era. Longbows have incredible range and power and every man above a certain age was required by law to spend a certain amount of time practicing every week. The end result was a contingent of strong, skilled and cheap fighters who could deal with most enemy armies before they even got close.

Tbh, by the time you reach last era, you can afford Varangians or armoured horsemen.

Light cavallery like konni are great at the start.
Because they can hunt down thr enemy when you are victorious - and guard your army when you lose.
