This month, we're bringing you exclusive content from our archive of members only website videos, featuring step-by-step instructions and ingredients for classic Cook's Illustrated recipes!

Stretching and rolling pieces of the dough into tight spirals, rather than rolling them into balls, organizes the gluten into sheets, so the rolls bake up with delicate layers.

I've made these a few times, and love the results, and love that they stay fresh for days, thanks to the water roux/tangzhong step. The only thing that tripped me up was that my mixer needed substantially more time to mix the dough (6qt Kitchenaid Pro Lift Bowl). It might be due to having a "cork screw" style dough hook, rather than the j-hook like in the video. Whatever it was, it took 10-15 minutes of mixing to get it to the point that I could even think about kneading it into a ball before the first rise. Still turned out great, still supper fluffy, just wanted to share in case someone else ran into this problem.

Oh my goodness gracious. 1st time is the charm. Amazingly delicious 😋. Made them for dinner with …bbq beef ribs. The dinners rolls outshined my bbq beef ribs and my beef ribs with my homemade bbq sauce is not to be played with. The best recipe for dinner rolls. I’ve ever tried.

Helpful Hint if you’re using a stand mixer kitchen aid place just behind #3 but in front of #4. Best results. If you notice her beaters are moving medium high not medium low.

Made these today. First time making dinner rolls from scratch. I found the recipe to be easy to follow and I am completely satisfied on how they came out.

I like it. Simple, clear, and the only fluff is in the rolls

Tried, followed the instructions exactly, came out perfectly. Recommend doubling the recipe amount.

I've made these a few times in the past few weeks, and they're wonderful. They're even better reheated the next day. Last time I sprinkled a little coarse salt on the tops right before baking, which came out great.

Looks great. I'll have to try the heating in the microwave bit. My rolls are always dense. Fingers crossed for light and fluffy!

This is just like the Japanese milk bread. Nice.

For those of you without a fully stocked kitchen, sounds like you can use a double boiler (mixing bowl on top of a pot with boiling water in it) instead of a microwave and an 8x8" (64in²) square cake pan (like you'd use for brownies) instead of a 9" (63.6in²) round cake pan. I'm sure you could also use a skillet with decent results but since the metal is usually thicker you'd likely need to slightly adjust the cooking time. I'm wouldn't make this recipe without a stand mixer, though.

There's a major jump between 1:18 and 1:19. That's a real slight of hand.

What if you don't have an electric mixer? How would you mix it by hand and for how long?

Most new bakers don't have bread flour.
Are there any recipes with just AP flour?

I brought you to 1k! lol. Just made this recipe today as my son was craving sweet rolls. He’s addicted to the stuff. We didn’t have time to get some from the bakery yesterday and today we’re on lockdown. It came out perfectly!! Was scared as I hardly have success at bread making. So I searched online till I came across yours. Simple, fast and easy to follow video.
