Yum yum yum! Growing up in California my German grandparents ate raw beef sandwiches for lunch. My grandfather would go to their butcher and pick out a fine steak and have it ground up. They would spread butter on french bread, spread on the raw beef and top with finely chopped onions. So delicious, but it is an acquired taste. Never tried pork but sounds very good. I would try it. Beef Tartare used to be very popular at bachelor parties when I was younger. Very delicious. Now it is very rare to find it where I live. We also called them cannibal sandwiches.

I grew up with and still eat tea wurst, mett, German salami, and raw beef with onions, salt, and pepper on German rye bread. I get everything except the raw beef from Bavarian Sausage in Fitchburg, Wisconsin. I don't live too far, but I do order many German products online.

I have had steak tartar in Denmark. It was served with small dishes containing a raw egg, chopped onion and capers. The breakfast table included cured and smoked bacon and other meats and sausages. You illustrate even more variety. Don't forget the almost raw, lightly cured fish, notably salmon and herring up north. The most raw that I tasted were strips of "green herring", to be draggedthrough a bowl of chopped onion, sold on the street in Amsterdam. Those people who think there is nothing like raw meat here never ordered a RARE steak in Colorado!

Wow, skyline of Frankfurt has changed a lot since my days. _(Goodbye Henninger Turm. Neuer, du bist es nischt.)_ See the Kaufhof am Zeil is still around. _(Use to go shopping there a lot.)_ Is the cafe still there, across the street? _(Street as in direction of bank/bahnhof, not across the zeil.)_

Ate cannibal sandwiches (raw beef, onions on miniature pumpernickel rye bread) a couple times as a kid.
Lately, pork has been the most inexpensive meat. They had pork tenderloins for $3.50/lb. last time I went shopping, so I picked up 3 of them. I'll have to check through your videos to see what you have for tenderloin recipes, and maybe take a crack at making my grandma's potato dumplings.

Beef Tartare is a French speciality, not German. In Southern Germany, Mett is very unpopular, almost unknown among the locals, like these "Teewurst" variations. Southern cuisine is more related with Austrian and Swiss and has some French and Italian influence, too.

As a kid we often ate raw ground beef on bread

Oh Salami is good. Have had salmon and tuna sashimi, beef tartare but never raw pork!

I know you are talking about eating raw meat but isn't their concern about infections or parasites? Like how do Germans make the raw meat safe to eat?

Anything that is smoked or air-dried is not raw.

I saw a documentary here in the U.S. about a guy who ate raw meat constantly. He claimed to never get sick. The documentary of course framed him as some kind of reckless and disgusting person. Humans were literal omnivores once, and tore fresh meat off the bone, so I wonder if our stomachs can handle it better than we think.
