There are serious problems with the accuracy of information in this video. Sodium nitrate (NaNO3) is not the same as sodium nitrite (NaNO2). Generally, for short-term curing (e.g., bacon and snack sticks), only sodium nitrite is used, whereas both sodium nitrate and sodium nitrite are used for long-term curing (e.g., ham and salami). While this may seem like a trivial difference, it is absolutely NOT. Sodium nitrate poses health risks that sodium nitrite does not, as this is well-documented. Sodium nitrate breaks down chemically over time into sodium nitrite -- the key being TIME. I have never heard of anyone making bacon with sodium nitrate; that would be a significant mistake.

If you can find the right PA Dutch or Amish farmers market you can find a rib roast of bacon with stuffing. A whole side of bacon and stuffing.

Vegans try to make "bacon" out of veggies. Absolutely NO ONE has tried to make real bacon taste like a carrot or tofu... Why?

Thanks talking about the harmful affects of the additives. I will still like bacon but if pure as I can get is great. And, the think you mentioned about some unhealthy pig farms, is really sort of a sad thing. One reason I hate commercial animal farming and don't want to buy anything related to them.
