My gastroenterologist told me that diet does not cause or cure ulcerative colitis. Thankfully, I then found the specific carbohydrate diet and completely healed myself. He wanted me to spend my life on medications and possibly even require surgeries. Instead, I am healthy. The SCD Diet saved my life

In 2018 I was daignosed with Marsh 3b atrophy, in 2022 despite a gluten/lactose free diet I still had a Marsh 3c with pre diabetes atherosclerosis and hypothyroidism.
I then did the classical meat/fish diet and now I am in remission. (Really important because a non responsive celiac patient can have refractory celiac disease).
Now I reintroduced some apples, honey, bananas, lemons and I am not having any celiac crisis no more.
Even colonoscopy has been taken ( doctor they were afraid of the saturated diet) and is completly fine.
Fasting also Is really important but we know that it helps people who has gastrointestinal disease.
Unfortunately as an Italian, the base of the mediterranean diet has bread, pasta, rice, pizza, croissant as a stable food.
Lactose and casein for me are a big no and even eggs.
Tuna/sardines/organs meats/chicken/ are perfectly fine. As a bevarage water, teas ( caffeine eliminated ) and fruits I usually enjoy them when I am at home alone.

Somehow i hate to eat fish, prefer beef . I know how beef is raised. But i dont know how fish is fished. Thats why
