INGREDIENTS:
🔹 Extra virgin olive oil (I used Early Harvest Greek EVOO)
🔹 4 slices Tuscan country bread, about ½-inch in thickness (or similar hearty bread)
🔹 Extra virgin olive oil to drizzle on bread
🔹 1 15-ounce can chickpeas, drained and rinsed
🔹 1 to 2 garlic cloves, minced
🔹 1 to 2 spring onions, white and green parts, trimmed and chopped
🔹 1 vine-ripened tomato, chopped
🔹 Kosher salt, to taste
🔹 1 teaspoon ground cumin
🔹 1 teaspoon Aleppo pepper
🔹 2 hard-boiled eggs, peeled and sliced
🔹 Fresh parsley for garnish

I won't be buying eggs any time soon, , not until the price comes down here in the Oklahoma Panhandle (Texas County) eggs are $6.96 for the white ones a dozen ugg
