I've tried living in every town as a normal citizen, and Valentine was definitely the best.
Wake up in a hotel room, buy oatmeal at the saloon for breakfast, feed my 2 horses (I keep a temporary horse to carry more animal carcasses), do anything else I feel like doing until 12:00, head over to the plains and hunt until 8:00pm, if I'm lucky I'll get 2 big animals, and 4 smaller animals, maybe one extra if I decide to walk back on foot with one animal in my own hands, sell all the carcasses and pelts to the butcher, buy supper at the saloon, then do whatever until I go to bed at the hotel.

Worst was Saint Denis, I tried the same routine but hunting in the swamps is really boring and a hassle. Then I tried living as a thief in the city, but it was more work with hardly any profit, I lost more money than I earned.
