Not sure if you are aware. In Blender 3.6 there is a new retopology overlay feature. Select Overlay/ Shading/Retopology. This will allow you to see mesh similarly to this method.

Theres a free addon called bsurfaces which makes the entire process much easier.

This title is a bit misleading. Instead of teaching us how to retopologize an object, you are teaching us what settings should we use so that we can start the process. Either way, I'll save this one! Thank you.
