My childhood on a plate. I used to eat these all the time growing up. ⁣

Start with 4 large russet potatoes. I got everything from my local @marianosmarket Peal them and then grate them using a box grater. Let that sit for 5-10 minutes to allow the extra water to pool up on top. Remove it with a paper towel.⁣

Add 2 eggs, 1 tbsp AP flour, 2 tbsp sour cream, a big pinch of salt, pepper and a small diced onion. Mix it all together. ⁣

Get your pan nice and hot with some olive oil. Drop in your batter and cook for 4-5 minutes per side, until golden brown. Flip and repeat. ⁣

You get a crispy exterior and a super soft and delicious inside. These are amazing on their own or you can top with gravy, meat, pretty much anything. My grandmother came from Poland in 1912 and brought with her potato pancakes! Perfect served with sour cream! Can't get enough! She died in 1983, but I continue to make these for my daughter!! I pray she keeps the recipes going for years to come!!!

Love being from Chicago and going to the polish neighborhoods for some excellent food. Growing up this old polish lady lived behind us and she’d always call us over to try something or to get some veggies from her garden. She just recently died but we loved her so much and will never forget her.

We call them "babky" (translates to "grandmas") in Slovakia. A lot of dishes use them, and they are so. So. Good.

But you can never make them as good as your mom can :)

My adoptive mom was Polish and my adoptive father was Russian (I'm Irish and German)- need I tell you all the incredible cooking that went on in my house? Everything was made from scratch and my mom's potato latkes was off the hook - boy do I miss those days!

We used to use our leftover mashed or baked potatoes at the Diner I worked at in high school, we would add cooked & crumbled breakfast sausage, cheddar, and green onion and OMG THEY'RE DELICIOUS!!!
They became so popular we had to start making potatoes just for those. Our sausage cheddar potato cakes became a huge hit, I agree with most of the comments that they are a comfort food and nobody makes them as good as your Mom and Grandma!!!

Thank you! Grating the potato was how I learned to make them. They taste so different from the ones that have potato shreds. Mom used to grate the onion as well. The extra effort is worth that texture. Love them!

I grew up on these too! My folks made them with leftover mashed potatoes. Yours turned out beautiful!
