i just saw a cooking competition, where two brillant 2-star michelin chefs had to rerecreat blindly a roasted pork by eckart witzigmann (chef of the century by gault-millau, 3 star michelin chef). the potatoe dumplings were very crisp on the outside - pretty much like your latkes. they had no idea how to recreate them, but i thought to myself: he used the potatoe starch like jean pierre did with his latkes. and well - i was right, where 2 outstanding chefs failed. witzigmann - and chef jean pierre - did exactly that.

its just another example of your profound knowledge. i cant thank you enough for your inspiration.

I'm in my late 60's and followed many chef's, and chef jean pierre is by far my favorite, a true professional along with humor and a lot of common sense, the man has it all, Godspeed!

I have been making latkes for 60 years and I have never tasted anything like these. This recipe is perfect, the cooked onions and ginger added a wonderful texture and flavor. They made Channukah and my husband’s 74th birthday extra special. Thank you Chef!

Chef, this recipe brings me back to my childhood in Germany . My best friend and I were teenagers 40 years ago, and when we were bored we used to make them . We did not spend time back than on the internet , you had to keep yourself occupied with something to stay out of trouble, so we made Kartoffelpuffer . Delicious

I could see these latkes prepared on my outdoor Blackstone griddle, with a few minor variations. And a nearby market has excellent Salmon. My introduction to Lox and latkes goes all the way back to my college undergrad years (1972 to be precise) when a Jewish professor of mine invited me to join him for lunch after class one day at an authentic local Jewish deli. As a kid growing up in the south, it was all a new experience. He ordered for me since I was completely unfamiliar with Jewish culture and cuisine. It was a meal I still remember and cherish to this day, 52 years later. And the prof, he sent me on my way to a rewarding career. Thanks Chef J-P for a good recipe and the memories.
